Learn to recognize the existing angle and burr before worrying about polishing. Consistency matters more than speed.
The biggest mistake to avoid is treating sharpening as a fixed ritual—twenty strokes on one side, twenty on the other—without inspecting the edge. Sharpening is a feedback process. Let the bevel, burr, light reflection, and cutting performance tell you what to do next.
